4 - 6 as a sauce
You may need to correct the flavour with a little sugar if the oranges are a little tart.
Use blood oranges for a wonderful crimson coloured sauce and great flavour.
This is a wonderful version of an orange sauce that goes so well with duck. It is very light especially with the addition of the coriander.
2 shallots, chopped
2 lemons, juice and zest
500ml orange juice
2 tbsp coriander, chopped
Blanch the lemon zest in boiling water and drain it well.
Add the shallots, lemon juice, zest and orange juice to a pan and bring to the boil, allow to reduce down to a third.
Add the coriander and serve.
