Citrus Sauce

This is a wonderful version of an orange sauce that goes so well with duck. It is very light especially with the addition of the coriander.

INGREDIENTS

2 shallots, chopped
2 lemons, juice and zest
500ml orange juice
2 tbsp coriander, chopped

METHOD

Blanch the lemon zest in boiling water and drain it well.
Add the shallots, lemon juice, zest and orange juice to a pan and bring to the boil, allow to reduce down to a third.
Add the coriander and serve.
