Mushroom Sauce

INGREDIENTS

1 medium onion, chopped
1/2 tbsp olive oil
100g shiitake mushrooms
100g oyster mushrooms
100g button mushrooms
1 tbsp thyme chopped
1/2 cup white wine
1 cup cream

METHOD

In a suitable pan warm the olive oil and lightly cook the onion until transparent.
Add the mushrooms and cook until tender, add the thyme and season with salt and pepper.
Add the wine, bring to the boil and reduce down, add the cream and reduce. Correct the seasoning.
Serve as required.
