4 as accompaniment
Lentils in all sort of ways are a great accompaniment to duck.
200g lentils, soaked and cooked
1 tsp Luv-a-Duck duck fat or olive oil
1/2 onion, chopped
1 clove garlic, finely chopped
1 rasher bacon, chopped
200ml Luv-a-Duck duck stock
125ml cream
Salt and freshly ground black pepper
In a suitable pan add the oil and warm, then add the onion, garlic and bacon and cook for a few minutes.
Add the lentils and the stock. Bring to the boil and simmer for 20 minutes, stirring occasionally.
Season with salt and pepper, add the cream and bring back to the boil.
Use as required.
