A very fiery sauce to dip your pancakes in. If you are not a big fan of a lot of chilli just reduce remove the red bullet chillies from the recipes as they contain the most heat.
4 serrano chillies, minced
4 Thai (birds eye) chillies, finely chopped
1 cup of finely sliced paw paw
1 cup sugar
1/2 cup water
1/2 cup rice vinegar (white vinegar)
2 tbsp finely minced garlic
1 tsp salt
1 tbsp Thai fish sauce
Juice of 2 limes
In a heavy based saucepan add all the ingredients for the sauce and bring to the boil, once the sauce starts to boil reduce the heat by half and allow to simmer until its consistency becomes thick, do not over cook or the sauce will burn.
