A great dressing to toss a green salad with when serving with duck.
The slight sweetness of this dressing and warmth from the mustard compliment duck well.
1 tsp grain mustard
1 tbsp honey
2 tbsp white wine vinegar
6 tbsp extra virgin olive oil
Salt and freshly ground black pepper
1 tbsp parsley, chopped
Combine all ingredients except the parsley and mix well. Taste for seasoning and add parsley just before serving.
