4 - 6 as a sauce
Always ensure more red wine goes in the sauce than in the cook!
This full-flavoured sauce is ideal to serve with roasted whole duck, duck breast or legs and is also the perfect accompaniment with the Luv-a-Duck ready roasted range.
300ml Luv-a-Duck duck stock
1 tsp Luv-a-Duck duck fat (or olive oil)
1 medium onion, chopped
1 sprig thyme
1 glass red wine
Heat the duck fat (or olive oil) over low heat, add the onion and thyme and gently cook until the onion is translucent but not brown.
Add the red wine, bring to the boil, reduce heat and simmer to reduce (until almost dry).
Add the duck stock, bring to the boil, reduce heat and simmer for approx 20 minutes or until reduced by half.
Remove the thyme. Blend the sauce, strain through a fine sieve and serve.
