Oriental Noodle Salad with Roasted Duck Nibbles

Ingredients

1/2 cabbage, shredded finely
2 large carrots
375gm egg noodles
1 1/2 cups teriyaki marinade (Kikkoman brand)
2 tsp ginger, finely grated
2 cloves garlic, finely grated
1 tbs dry sherry
2 tbs sugar
2 packets Roasted Duck Nibbles
Fresh coriander or thai basil

Equipment required

  • Chopping board
  • Chefs knife
  • Dessertspoon
  • Tongs
  • Serving plates
  • Bowls
  • Roasting tray
  • Wooden spoon

Method

  1. Toss together cabbage and carrot.
  2. Cook the noodles until soft. Drain.
  3. While the noodles are cooking, prepare the sauce.
  4. In a saucepan, simmer for 5 mins, the teriyaki marinade, ginger, garlic, sherry and sugar.
  5. While the sauce is hot, mix with the noodles and vegetables, put aside to let the flavours infuse.
  6. Cook the Roasted Duck Nibbles in the oven following the directions on the back of the packet.
  7. Toss fresh herbs through mixture just prior to serving.
  8. Serve noodles topped with shanks and sprinkle with dried shallots if desired.
