Duck a l’Orange with Fresh Duck Legs

Ingredients

  • 4 Luv-a-Duck duck legs
  • ¼ cup white wine
  • 1 tbsp  orange liqueur
  • 2 oranges, zested  and juiced
  • ½ cup Luv-a-Duck duck stock
  • ¼ cup sugar
  • salt and pepper

Method

  1. Preheat oven to 190°C.
  2. Place  duck legs skin side up and roast in the oven for 30 min.
  3. Reduce oven temperature to 170°C and continue roasting duck legs for 60 min.
  4. Deglaze a frypan with white wine, stand back as the pan may flame. Let it reduce by half.
  5. Add orange liqueur and allow to boil. Add orange juice and orange zest, duck stock and sugar and allow it to reduce to a syrupy sauce.
  6. Rest duck legs for 5 min, then arrange on a platter and glaze sauce over the top.
