How To: Make Delicious Duck Fat Roast Potatoes

Potatoes roasted in duck fat are widely recognised as the crispiest, tastiest and the best in the world. There is no real secret - just follow these simple steps.

  • 1kg Floury Potatoes, are best
  • 2 Tblsp Luv-a-Duck, Duck Fat
  • Salt and Pepper

Cooking Instructions

  1. Pre-heat the oven to 200c
  2. Peel and cut the potatoes into even size pieces, put into a suitable size saucepan with plenty of cold salted water, bring to the boil and allow to simmer for about 3 minutes. Do not overcook.
  3. Drain the potatoes, removing as much water as possible. Put potatoes back in the saucepan.
  4. Add the duck fat to the potatoes with salt and pepper. With the lid on, give the pan a vigorous shake to rough up the edges and coat the potatoes with duck fat.
  5. Place potatoes in a tray and roast in the oven until golden and crunchy

Tips: Use a clean tea towel to thoroughly dry the par boiled potatoes. Roast with garlic cloves and rosemary for a wonderful aroma.
