Red Curry Duck Legs with Chilli Stir Fry Asian Greens

Ingredients

1 pack Luv-a-Duck Red Curry Duck Legs 500g
2 teaspoons peanut oil
2 garlic cloves, thinly sliced
1 small red chilli, deseeded, thinly sliced
1 bunch choy sum, trimmed
1 bunch gai lan (Chinese broccoli), trimmed
1 teaspoon sesame oil
1 tablespoon Mushroom soy sauce (or regular soy sauce)
1 tsp Toasted Sesame seeds
Jasmine rice, to serve

Choy sum and gai lan may be substituted with your choice of Asian vegetables.

Method

  1. Pre-heat oven to 190°C.
     
  2. Remove duck from pack and place skin side up on a lined baking tray or dish and bake for 15 mins.
     
  3. Heat peanut oil in a wok over high heat. Add garlic and chilli. Stir-fry for 1 minute or until fragrant.
     
  4. Add choy sum and gai lan stems. Stir-fry for 2 to 3 minutes. Add choy sum and gai lan leaves. Stir-fry for 1 minute or until just wilted.
     
  5. Add sesame oil, soy sauce. Stir-fry for 1 minute or until heated through. Top with sesame seeds
     
  6. Serve Red Curry Duck Legs with the stir fry vegetables and jasmine rice.
